Super-easy supper tonight:
Leftover taco beef from last night
2 cans refried beans
1/4 cup vegetable oil
Spices to taste
Combine in a small pot or large saucepan over medium heat for about 15 minutes.
Serve as a dip with tortilla strips (as I did), or spoon into flour tortillas with toppings of your choice and roll into a hearty beef and bean burrito.
What doesn't get eaten tonight goes into the freezer for a chili base for later.
I am (tentatively) Florida-bound again this summer! I am really excited about the prospect of another all-girl beach trip. Last summer was a blast, and exactly what I needed to "get away from it all." Of course, I hope to branch out one of these days, and start vacationing in other places as well. I'm thinking a getaway to the Outer Banks of North Carolina, maybe opt for
Hilton Head rentals in South Carolina, and.....a Six Flags trip for me and the boys. I'd love to go to the ULTIMATE coaster park, Cedar Point! I think the klds and I would rock those coasters like nobody's business!
With the recent purchases of my china cabinet bedside (end) tables, vintage home office furniture, and now my vintage pink curved sofa, I feel like my home is finally starting to come together. The style I have chosen for my home is slowly starting to show through. Other than major changes, such as flooring, I'm probably good to go with just a few coats of paint and some updated lighting from
Seagull lighting. I hope get rid of my ceiling fan in the living room, and the overhead flourescent light in the kitchen in particular. That stuff's just gotta go.
And I was doing so well! With my resolution of eating better and working out more, that is! But something happened, and now I am struggling to get myself back on track and get it together once again. I seriously need to go on a show like Extreme Makeover or The Biggest Loser. That is probably the closest thing to a
drug treatment centers-style approach and method that a very weak dieter has! I am having such a hard time with it...I feel like I need to be locked away in order to get a really good start.
One of my very favorite pastimes, antique/thrift store shopping, usually always yields the most incredible stuff. One of the things that I really, really love, but have no room for, is old luggage. I've seen in decor magazines where designers will use a stack of old trunks, and sometimes old suitcases, for extra storage and a unique look. I thought of exactly that recently when I saw a small set of retro-ish
Samsonite suitcases in a thrift store. I talked myself out of it, but am still tempted.
